Oven Baked Broccoli Fried Rice

  1. Whisk eggs in a medium bowl and season with salt.
  2. In a separate bowl whisk sugar, soy sauce, vinegar, and salt. Add the grated ginger and minced garlic and give the sauce another whisk.
  3. In another bowl add the broccoli and scallions, season with a good pinch of salt, and toss with the sesame oil. Now add the sauce and gently fold together with a rubber spatula until the rice is fully coated.
  4. Spread the mixture on parchment paper on a baking sheet and cover with aluminum foil. Bake for 10 minutes. Remove the foil and bake until slightly browned, another 12-15 minutes.
